So, what does Heather look for when producing a high-quality Marlborough Sauvignon Blanc?
The key is highlighting the intensity and concentration of flavour in our grapes.
When crafting Delta Estate Wines, Heather looks for balanced flavours – a pronounced tropical palate with notes of herbaceousness, and a perceptible minerality.
Heather also takes into consideration palate weight. Ensuring there is a notable line of acidity without being searing. She comments, “As a very fruit driven wine, I like to ensure there's an element of elegance and restraint to add sophistication to the fruitiness. I always love vineyards that produce a salty minerality of the palate. Passionfruit, blackcurrant, capsicum, salt.”
